Rice Patties PDF Print E-mail
IngredientsMethod
6 cups steamed brown rice
4 Tbsp. nut butter (cashew, peanut or almond)
3 Tbsp. soy flour
1 small onion
2 Tbsp. oil
1/2 cup soy or nut milk
1 cup walnuts or pecans, chopped
1/2 cup celery (optional)
2 Tbsp. parsley
1/2 tsp. salt (to taste)

breading mixture:
1/2 cup cornmeal
1 cup whole wheat flour
1 tsp. oregano
1 tsp. salt.
Mix rice, nut butter and 2 Tbsp. soy flour and set aside.

Saute onion in oil and add 1 Tbsp. soy flour. Then add the milk and stir until thickened. Mix with rice mixture. Mix in rest of ingredients well. Chill until firm (1/2 hour). Form into patties and dip in breading mixture. Bake in shallow pan at 375° for 45 minutes.
