Beet Salad PDF Print E-mail
IngredientsMethod
1 1/2 cup beets, cooked, cubed
1 cup potatoes, cooked, cubed
1 cup pickles
1/2 cup onion, chopped fine
1 cup oil
lemon juice and celery
salt to taste
Mix vegetables together. Combine oil, lemon juice and salt for the dressing or use tofu sour cream. Mix desired dressing with vegetables.

VARIATION: Peas and carrots may also be added
